Today I’m reviewing the Farberware Air Fryer. Most people buy air fryers because they are trying to cook with less oil and it’s a good alternative to deep fried foods. With most of the food that you cook on the air fryer, you only use about one tablespoon of oil.
The air fryer works by circulating hot air at a high speed. There’s also a top-heating element inside to help cook the food from all sides. You can use this unit to reheat food and not just to cook food. It’s best not to put greasy fatty foods like sausage in here, because the unit could catch fire.
Farberware air fryer manual
The instruction manual has recommended cooking times and temperatures for room temperature food and frozen food. Even with frozen food it’s recommended to bring the food to fridge temperature and not straight out of the freezer. There’s a separate recipe book with recipes for fried chicken, French fries, vegetables and desserts like cookies and brownies. If you want to bake in this air fryer use a baking tin, a foil tray or any other type of dish that you would use in a regular oven. Of course, you cannot use cardboard or plastic.
Farberware Air fryer Review
The unit measures a little over 13 inches tall and 10 inches wide. The power indicator is on top and the temperature indicator is right below. The temperature control knob that you can set anywhere from 175 to 400 degrees Fahrenheit. Timer that you can set from 1 to 30 minutes. It’s also the on and off switch.
There are pictures showing how much time food takes to cook, which is helpful so you don’t have to pull out the manual. The air vent is in the back and you don’t want to block that. You can cook up to 2 pounds of food in this unit.
When you first pull the air fryer out of the box, there’s a really strong plastic smell. Before using the air fryer for the first time, turn the heat to 400 degrees and let it run for about 20 minutes. After the unit cools down, wash the basket and the holder.
To use, put the unit on a flat surface and make sure there’s a few inches of space around it. Put the basket into the holder, put your food in the basket, close it and set the temperature and time. Both the power and temperature indicators will be lit up. It is known for the temperature indicator to go on and off during cooking.
The basket goes into the holder. If you want to take the basket out, just push this cover forward and press the red button and you can just pull up the basket.Goes straight into the holder.
The basket and holder are dishwasher safe but I’d recommend hand washing it. To clean, use a damp sponge with a mild detergent. You can use that for the outside and inside; just make sure that everything is dry before you turn the unit back on. Also don’t use any metal scouring pads or anything abrasive to clean the unit. Test with French fries
I’ll cook French fries first. It’s best to use a maximum of 1.2lbs of potatoes for French fries, and these potatoes are just about that weight. I’ve peeled and cut them up into about a quarter inch thickness. Some are a little bit thinner; some are thicker. These are two large potatoes.
Now you do have to soak them in water for 30 minutes. I’ll drain these and dry them really well. I’m not adding any spices to the potatoes because I just want to see how pure French fries turn out.
Before you cook the French fries, you have to heat the oven to 400 degrees for a few minutes. The temperature dial is at 400 and I’m going to turn the timer to 5 minutes.
You can see both the lights are on. It’s been 5 minutes, so I’ll take the basket out. I’ve rinsed and dried the potatoes and coated them in 1 tablespoon of oil. Always coat your food with oil; don’t ever pour oil into the tray or the holder. I’ll put the potatoes in. You can see the basket is half full.
The temperature is at 400 and I’m going to set the timer to 10 minutes. You can hear the air fryer; it sounds like a fan. It’s not very loud.
So when the timer goes off you’ll hear a ding. Ten minutes are up; I’ll take the basket out. You can see some of the fries are crispy around the edges, just going to toss these.
If you have to shake food during cooking, pull the basket out, shake it and put it back. The unit turns off when you take the basket out and turns back on when you put the basket in.
The timer will keep running down, you don’t have to turn the timer on again. Now we’ll put this back and cook it for about 5 to 10 minutes. I’ll set the timer to 5 minutes and check the fries. After 5 minutes, they’re almost cooked but not quite and they still don’t have much colour on them so I’m going to put this is for another 5 minutes.
The 5 minutes timer is gone off so now it’s been a total of 20 minutes. Here are the fries. Some are golden like this one and some are not. Let me see if they’re cooked. They are cooked; I’ll just taste it. They are cooked but some of the thicker ones are just cooked in the middle. They could use a few more minutes. So after 20 minutes, most of the fries are done, it’s just that there’s barely any colour on them and they’re not crispy. There are very few in here that are crispy. I want some more colour on my French fries because otherwise it just doesn’t look very appetizing. I’m going to put this back in the fryer for another 5 minutes.
So it has been another five minutes for a total of 25 minutes. They are way browner now, which is good. These are acceptable. There are still some white ones there, they’re not even at all but there are some that are crispy and some that are not. I’ll just taste this one. It is crunchy. As you can see they are not the prettiest plate of fries. Twenty-five minutes should be more than enough to cook French fries.
Now I did doa review of the Phillips air fryer a while back. You can watch that review down below if you’d like and those fries cooked in about 22 minutes and most of them were a nice golden brown. Now the clean up is very easy. There’s hardly any oil splatter in the basket and you can just wipe that off. The basket holder has a few drops of oil and some tiny pieces of potato, so clean up should be really quick.
I’m going to wipe this down and try to make chicken wings next.
Test with chicken wings
I’ve heated the air fryer for 5 minutes at 360 degrees Fahrenheit. This is about one and a quarter pounds of chicken wings. I’ve put 1 tbsp. oil, salt, chilli powder, paprika, garlic powder and onion powder.
There are 12 pieces in here and they are in a single layer. Nothing is on top of each other so these should brown evenly. Put this in and I’ll turn the timer to 10 minutes and we’ll check the chicken after that. It’s been 10 minutes; I’m going to pull the chicken out. They actually look really good, I’m going to flip them over and you can see one side is whiter than the other.
I’ll put the chicken back and I’ll turn the timer on for another 10 minutes. When the timer counts down, you’ll hear a bell and the unit shuts off automatically, both indicators turn off. You can also turn the unit off manually by turning the timer knob to zero.
So now the chicken has cooked for 20 minutes. That looks nice and golden brown. The chicken is actually pretty even and golden brown everywhere. Looks good, I can see a little bit of white here. But for the most part it’s golden brown throughout. I’ll check this piece to see if it’s cooked. Now let me taste it; it’s very tasty and it’s cooked. You can see the meat comes off the bones nicely, so it is nicely cooked. It is crispy. Most of the parts are crispy, there’s a little bit of soft skin here but most of the chicken is crispy.
The chicken wings are very impressive. They’re cooked they’re crispy and they’re really delicious. That’s a really good-looking plate of chicken wings.
You can see the grease in the basket and the basket holder has about 2 tbsp. of grease in it. This is definitely a healthier way to eat chicken wings that taste almost like fried chicken wings. If you’re trying to avoid deep fried food, this is a more than acceptable version of chicken wings.
The housing is a little bit warm but the handle does stay cool during cooking. The air fryer did a great job on the chicken wings; they’re crispy they’re delicious, and a decent job on the potatoes. The potatoes were cooked through and tasted just fine; it’s just that they were not really crispy.
Ingredients: 2 medium potatoes 2 Tsp. Olive Oil 1/2 Tsp. Sea Salt Pinch of Thyme Pinch of Oregano
Try it with barbecue dipping sacuce
Wash and peel potatoes. Slice into 1/2 inch thick potato strips
Soak the potato strips in a bowl of water for 20 minutes, then drain and pat dry with paper towel.
Place the potatoes in a large mixing bowl, and stir in olive oil, sea salt, thyme and oregana. Make sure potatoes are coated and seasoned well.
And the seasoned potatoes to the air fryer basket and cook at 350 degress for 20 minutes. Stir fries midway through cooking.
Remove the basket when fries are crispy and golden brown.
Bacon Wrapped Shrimp
Ingredients: 12 Jumbo Shrimp (peeled & deveined) 12 Slices of bacon (thin sliced) Garlic Salt 1/2 Lemon
Try it with a basil pestro sauce
Rinse the shrimp under cold running water and pat dry with a paper towel
Tightly wrap the tail end of the shrimp with a slice of bacon, and overlap until you reach the top
Lay all of the wrapped shrimp on a deep dish and squeeze the lemon to cover with juice. Add garlic salt.
Place the shrimp in the air fryer with some space between each shrimp to avoid sticking
Fry the bacon wrapped shrimp at 350 degress for 7 minutes. Turn the shrimp over midway through cooking. Remove from basket when golden
Mozzarella Basil Bruschetta
Ingredients: 5 Roma tomatoes 1/2 inch Fresh mozzarella slices 1 Baguette 1 Garlic Clove (Minced) 1 Tbsp Extra virgin olive oil 5 Fress basil leaves (Thin chopped) 1/2 Tsp Dry oregano 1 Tsp Salt
Try it with a basil pestro sauce
For tomato mixture, chop fresh tomatoes and place them in a medium bowl. Add olive oil and mix in salt, oregano, inced garlic, and basil leaves. Mix well and set aside.
Slice the baguette into 1 inch slices. Place a slice of fresh mozzarella on each bread slice and place in air fryer basket. Bake at 370 degrees for 5 minutes until cheese has melted.
Carefully remove the fryer and spread the tomato mixture on top of the melted cheese. Top right before
Sweet Potato Fries
Ingredients: 3-5 sweet potatoes 2 Tsp Olive oil Garlic Salt Black Pepper Salt 1/2 Tsp Paprika
Try it with a spicy ranch dipping sauce
Wash and peel Sweet potatoes. Slice into 1/2 inch thick potato strips.
Soak the potato strips in a bowl of water for 20 minutes, then drain and pat dry with paper towel
Place the potatoes in a large mixing bowl, and stir in olive oil, salt, black pepper, garlic salt and paprika.
Add the seasoned sweet potatoes to the air fryer basket and cook at 370 degrees for 20 minutes. Stir fried midway through cooking.
Remove the basket when fries are crispy and golden brown
Lemon Garlic Crusted Salmon
Ingredients: 6 Salmon Fillets 3 oz. Butter 1 Garlic clove (Minced) 1 Large Lemon 1 Tsp Salt 1 Tbsp chopped parsley 1 Tsp chopped dill
Use olive oil instead of butter for the mixture for a healthy alternative
Begin by making the butter mix- Heat butter over stove or melt in microwave to liquefy. Add in all spices and lemon juice and mix well.
Spray bottom of air fryer with cooking oil or insert a layer of foil
Place saimon fillets in frying basket, and with a pastry brush, coat salmon evenly with the butter mixture.
Bake in air fryer at 350 degrees for 15 minutes. Turn the fillet over midway and brush with more butter mixture for even cooking
Remove the basket when the salmon fillets are golden crusted
Spicy Grilled Cheese
Ingredients 2 Slices of Texas toast 2 Slices of pepper jack Cheese 1 Slice of American Buffer Crushed red pepper
Try cooking it with chipotle ranch topping.
Brush butter on a slice of Texas toast
Place cheeses slices and sprinkle crushed red pepper onto the cheese
Cover the sandwich with the other slice of bread, coat with butter and place sandwich in basket.
Cook the sandwich at 350 degrees for 5 minutes
Remove the basket when the cheese has melted and the toast is golden brown
Chipotle Tuna Melt
Ingredients 2 Slices of Italian bread 1/2 Cup mayonnaise 2 Chipotle peppers in adobe sauce Pinch of garlic salt Pinch of black pepper Butter 12 oz Tuna Pinch of cilantro 1 Slice of American Cheese
Try it with a side of your favorite chips
Blend/ Process Chipotle peppers in mayo, mix in garlic salt, and black pepper.
Pour the mix into a medium bowl and stir in the tuna. Add cilantro and salt or pepper to taste.
Coat the toast with butter, then spread the tuna onto the buttered slice of bread. Top with cheese and bread. Buffer the tob slice.
Place the sandwich into the fryer basket and cook 320 degress for 4 minutes
Rmove the bsket when cheese has melted or when tost is golden.
Spinach Cheese Stuffed Shells
Ingredients 6 ox Jumbo pasta shells 1 Cup ricotta cheese 1 Cup shredded mozzarella cheese 1 Cup chopped spinach 1/2 Cub Fresh Grated Parmesan cheese 1 Egg 1 (26 oz) Jar pasta sauce
Try it with some air fryer made fresh garlic bread
Cook shells according to package directions in boiling water and drain
In a separate bowl, mix all cheeses, egg and spinach, then stuff each generouslly with the mixture
Spread a 1/2 cup of spagheti sauce onto a 7-inch pan. Place stuffed shells on pan, open side up. Spread the remaining sauce on top.
Place the pain inside the fryer basket and bake at 275 degrees for 25 minutes
Carefully remove the pan from basket and serve
Spicy Chipotle Drumsticks
6 Chicken drumsticks 1 Can chipotle chiles in adobo sauce 2 tbsp olive oil Pinch of salt
Marinating the drum-sticks overnight gives a much richer flavor
Preheat the air fryer for 320 degrees
Blend/Process the chipotle chiles to make a Chile paste. And a table spoon of the adobo sauce from the can. Add a pinch of salt, and fresh ground pepper to taste.
Mix the Chile paste with olive oil, then marinate the chicken in the mixture in a ziploc bag for at least 25 minutes
Place drumsticks in fryer basket and cook at 320 degrees for 30 minutes. Turn the drumsticks midway through coooking and brush with leftover marinade.
Carefully remove the drumsticks when crispy and golden
Ingredients 5-6 Apples (peeled & sliced) 1/3 Cup Granulated sugar 2 Tbsp Brown sugar 2 Tsp cinnamon 1 tbsp cornstarch 1/4 Cup waster 1/2 tsp vanilla extract Pastry dough 4 tbsp Butter
Try it with a carmel dipping sauce
Peel and slice apples into small chunks and place in pot. In a separate bowl, combine sugars, cinnamon, and cornstarch and mix well.
Sprinkle the mixed dry ingrediens over apples in pot, and add water, vanilla extract, 2 Tbsp of butter and mix well
Cover pot and turn heat to high until it starts to boil. Once it begins to boil, turn heat down. Simmer until apples are tender and mixture begins to thicken
Remove pot from heat and let it cool down. Onec the mixture has cooled down to room temerature, lay the pastry dough flat and fill with apple mixture. Moisten the edges with water to seal and press the edges with a fork to close the pockets
Place empandas in the air fryer basket and fry at 350 degreees for 15 minutes. Do not over fill basket when cooking. Remove when golden.
Ingredients 16 oz Cream Cheese (room temperature) 1 Tsp Vanilla extract 2 Tbsp Brown sugar Pinch of cinnamon 1 Large egg 1 Cup Sweetened condensed milk
Try sprinkling some shaved almonds for a delicious crunchy texture
Preheat air fryer to 350 degress. Pulse graham crackers in a food processor or blender until they are finely groud, and pour in a large bowl. Stir in sugar
Poor the crust mixture into the 7 inch pie pan adn press gently to flatten and evenly cover the base of the pan. Place in air fyrer for 5 minutes then remove and set aside to cool down.
With a mixer , beat the cream cheese on amedium speed until a smooth soft and creamy texture. Add sugar, egg, vanilla extra, and condensed milk
Pour the cream cheese mixture into the 7 inch pie pan over the graham cracker cust. Smooth the top of the cream cheese mixture with a spatula
Place the pie pan in the air fryer basket and bake at 350 degrees for 40 minutes. Remove when golden. Allow to cool ompletely before serving.
Strawberry Egg Rolls
Ingredients 8 egg roll wrappers 15 Strawberries (diced) 2 oz melted unsalted butter
Cheesecake Filling 16 oz Cream cheese (room temperature) 4 Tbsp granulated sugar 1 Tsp vanilla extract Pin of cinnamon 1 Tbsp Lemon juice
Try dipping in sour cream for a refreshing zing
In a mixing bowl, beat the softened cream cheese with the sugar and lemon juice
Gently fold in strawberries into the cheesecake mix, but do not beat the straberries
Lay egg roll wrappers down and place 2 tablespoons of cheesecake mixture in center in a line, fold side corners in, and begin rolling, using water to seal edges
Place egg rolls in air fryer basket and brush with melted unsalted butter and fry at 375 degrees for 15 minutes
Remove when golden brown. Allow to fully cool before serving
Ingredients 1/2 Cup unsalted butter 1 cub granulated sugar 1 Tsp Vanilla extract 2 Eggs 1/2 Cup all purpose flour 1/3 Cub unsweetened cocoa 1/4 Tsp Baking powder Pinh of salt
Try adding a handfull of walnuts for a crunchy chewy texturel
Prehead your fryer to 340 degress. Grease you GowiseUSA Cake pan or any cake pan that fits in the fryer basket
In a medium bowl mix together melted butter, eggs, and vanilla extract
In a separated bowl, combine flour, sugar , cocoa powder, baking powder and salt.
Gradually stir in wet ingredients into dry ingredients until it is well blended (Walnuts or Chocolate Chips may be added at this point)
Spread the batter in the cake pan- Don not overfill, two pans may be made. Once brownie mix is in pan, place in air fryer and bake at 340 degrees for 20 minutes. Poke the brownies with a kinfe or fork to ensure the mix doews not come up and uncooked. Remove carefully and allow to cool
Ingredients 4 Large red apples 1/2 Cup brown sugar 1/2 Tsp cinnamon 1 Large Lemon 1 Cup dried cranberries Crumble 1/2 Cup unsalted butter (cubed) 1/2Cup brown sugar 1 Cup multi- purpose flour 1/2 Tsp cinnamon
Top it with a caramel sauce to realily bring it together
Peel and dice apples. Place apple chunks into a medium bowl, then cranberries, 1/2 cup of brown sugar, cinnamon, juice from lemon, and mix well.
To make the crumble, use a large mixing bowl and add 1/2 cup of brown sugar, salt, flour and cinnamon. Mix in butter cubes and mash to make a consistent clumpy texture.
Pour the apple mix into a baking dish and top with the crumble. Place the dish into the air fryer basket and bake at 350 degrees for 30 minutes.
One of the most difficult challenges that every housewife has to face is to make a great dish yet still healthy. However, the method we use to cook our food somehow naturally affects our health. Example, Deep- frying.

With this fryer, now I just put all the frozen fare inside and push a button, then the air fryer will finish everything else. It is not only beneficial to our health but also is a game changer in our busy life.

If your family consume more, you can consider the 10.5qt Gowise turbo air fryer, which is larger and more comfortable for frying.
To name 8 settings respectively, they are warm-up, chips, chicken, steak, meat, cake, and fish. These are all programmed so that you can just press the button and all the temperatures and time issue won’t become big troubles anymore longer.
Temperature and Time
If you are not fond of with the auto settings, you can still stick with the manual choices.
The cookware sets the minimum temperature is 176 degrees Fahrenheit, and the maximum one is up to 392 degrees. Every food from frozen to fried can be processed completely well under this range. It gives you full flexibility to cook whatever you want.
The maximum time is 30 minutes. Some might question if the air fryer cooks everything longer than usual, it does. However, we usually cook in this device for about 1 or 2 serving, so you don’t have to worry about the time because it will be much shorter.
One plus point is that you can stop the cooking process right in the middle to give the food a shake or something. Some other appliance doesn’t allow us to do this when the device is running.
There is an ETL mark in the product showing that this has reached the safety standards. And as my practical use, it shows me many relieved points.
First is that this fryer’s handle is not heated up during the cooking process, so that we can freely move the basket anytime we want.
The automatic program runs quite safely, too as I tried to remove the basket once when it hasn’t reached the target time, and the whole system went off completely. It totally switches off itself whenever we remove the basket from the drawer or the cooking process has been done. We don’t have to pay much attention as deep frying but still no overcooked accidents.
There is a guard button on the stay-cool handle, which keeps the release button inside. If you want to detach the basket from the pan, you have to slide the guard upwards and then the button that time will be revealed. This decrease the risk of falling off baskets and make sure our food is kept in a closed system.
Cooking basket and Pan
The cookware is equipped with a removable drip pan and a detachable metal cooking basket ( 8” x 8” x3”), which are made of iron with non-stick surface coating. The basket helps us a lot in shaking the food inside because of the solid walls.
If you use this machine, you need to shake your food halfway of the process to make sure it will fry evenly and your food can gain a beautiful golden brown color after all.
A feature that I am really satisfied is that it only has 1 basket. Every time I try to fry a different kind of food at the same time, it becomes a real struggle. In contrast, the Philips one offers 2 layers so that we can fry separate food.

This device is so dishwasher-friendly. All the things you can put into your dishwasher are the removable iron metal cooking basket, the Calphalon non-stick coating, and the basket holder.
One of some small tips that I use to get a quicker cleaning is soaking everything in hot water immediately after cooking. By this, when you get back from your meals, there is just a bit grease left and it is much easier for cleaning.
Adding that you should not use scrubs with the basket since all the small wires can get stuck in the corners and nobody want to spend more time to take them all out.
I scoured the Internet and also found many positive reviews on this product. It can do almost every fried dish from Chicken, French fries, to frozen foods and tater tots. The most impressive thing that people say about this is that there is no oil, which I believe is also the issue that you’re looking for.
1.VonShef 2.3QT (2.2L) Air Fryer 1230W
If you want to save space in your kitchen, you can consider The VonShef. It has a popular air fryer size of 2.3-quart basket. Furthermore, it can push the maximum heat up to 400F and still bring the warmness and crispiness to our food even when it only uses 1230W of energy. One more good point is that it won’t affect your energy cost. Save money, save energy still serve delicious food. However, it is lack of pre-cooking setting times.
If you are seeking for your large meal cooked in a short time, you should meet TFal. Its capacity is much bigger than the GOWISE one. With one teaspoon of oil, you can cook up to 2.2 pounds of food! Interesting enough, it is truly lightweight. So small but a real beast.
I believe Airfryer is a trend in modern cooking nowadays. It is a must-have item that can help us quickly deal with every deep-fry meal perfectly, even with a large amount of food. The cooking process will be no longer a burden to our housewife, and you won’t have to worry about oil issues anymore, too.

2 chicken breasts 1 cup buttermilk 1/2 cup canned chipotles in adobo sauce, pureed 2 cups flour Salt and pepper 1 bunch cilantro, chopped
Cut chicken breasts into 1 1/2-inch pieces. Place in mixing bowl and cover with buttermilk and pureed chipotle chilis.
Cover and refrigerate overnight.
Once the chicken has had time to sit in buttermilk, dredge the chicken in seasoned flour and fry in a 350 degree fryer.
Once out of fryer, season with salt, pepper and chopped cilantro.

1/2 pound ground beef 1/2 yellow onion finely chopped 1/4 pound aged provolone, coarsely shredded 8 ounces Philadelphia cream cheese, softened salt and pepper to taste 24 jalapeños, tops and seeds removed 3 eggs beaten canola or vegetable oil, for frying
Heat a large heavy pan over medium heat, then cook the ground beef until fully browned, breaking up chunks with a wooden spoon.
Remove ground beef to a layer of paper towels using a slotted spoon, and drain off all but a tablespoon of the fat. Allow the beef to cool to room temperature.
Add chopped onions to the hot fat and fry until lightly caramelized, about 8-10 minutes. Remove from pan and allow to cool completely.
When beef and onions are cool, mix them with the cream cheese and provolone until just combined. Season with salt and pepper to taste.
Carefully fill each hollowed-out jalapeño using a small spoon and leave at least 1/2-inch of room from the top.
Dip each jalapeño in the beaten egg making sure to get some inside the top opening, then very gently roll in breadcrumbs making sure to press some inside the opening, creating a plug. Since the outside of jalapeños are smooth and slippery, the poppers may require more than one coat of breadcrumbs to really make them adhere.
Heat enough oil for deep-frying in a large pot over medium heat, about 360 degrees.
Fry poppers in batches being careful not to overcrowd the pot or fryer until deep golden-brown, about 3-5 minutes.
Remove from fryer, drain on paper towels and allow to cool slightly before eating.
Ingredients 12 large chicken drumsticks, skin on 1 cup pickled daikon vegetable oil Roasted Garlic- Soy Glaze 2 cups chicken stock 1 cup soy sauce 1 cup mirin 2 cups roasted garlic cloves, pured 2 tablespoons chopped scallions, for garnish 1 tablespoon roasted and salted sesame seeds, for garnish
In a deep stockpot, heat 6 to 8 inches of vegetable oil until it reaches 375ºF when measured with a candy or deep-fry thermometer. Add the drumsticks and fry for about 8 minutes. Transfer to a cookie sheet andset aside, reserving the oil in the stockpot.
In a medium saucepan, combine all ingredients for the Roasted Garlic Soy–Glaze and bring to a low boil over medium heat. Simmer for 20 to 25 minutes, or until the sauce has reduced by a third. Remove from theheat and set aside.
Heat the reserved oil until it reaches 375ºF again. Fry the drumsticksagain, for 4 to 5 minutes, or until cooked through. Insert a meat thermometer into the thickest part of the leg; when the temperature reads 160ºF, the chicken is done.
Transfer immediately to the saucepan of Roasted Garlic–Soy Glaze and let sit for about 2 minutes to allow the chicken to absorb the flavors.
Shake the excess glaze off and transfer the chicken thighs to a serving platter.
Sprinkle with the chopped scallions and sesame seeds and serve immediately.
Crunchy Pig Skin Popcorn Recipe

Ingredients For the popcorn 2 pounds pork skin with a thin layer of fat For the spice mix 2 tablespoons kosher salt 4 tablespoons sugar 2 teaspoons cayenne 1 tablespoon smoked parprika
Place pig skin in stockpot, cover with water and bring to a boil.
Boil skin for 2 hours, until very soft and able to tear apart easily.
Turn pot off and let cool for half an hour.
Remove skin from warm water and lie out onto cooling racks, skin side down, and place in refrigerator for 2 hours.
Once chilled, remove skin from rack and begin to scrape off as much fat as possible. (This is important, the more fat you remove the crispier your popcorn will get.)
Once you have removed all of the fat, dice the skin into ¼-inch cubes and allow to dry out on a sheet tray overnight or until completely dry.
The skin will feel rock hard and inedible, that’s how to know it’s ready.
Once skin is completely dry, drop into a 375F deep fryer and allow to puff. It’ll take about 20 seconds.
Remove what is now the popcorn from the fryer, season with spice mix and serve.
Ingredients 3 eggs 2 cups Coca-Cola 1/4 cup granulated sugar 3 to 4 cups all-purpose flour 2 teaspoons baking powder 1/2 teaspoon salt vegetable oil for deep frying powdered sugar Pure cola syrup Garnish (optional) whipped cream maraschino cherries
In a large bowl, beat the eggs, then add the Coca-Cola and granulated sugar.
Sift 2 cups of the flour, the baking powder, and salt and add to the Coca-Cola mixture. Mix while adding more flour, until the batter is smooth and not too thick.
Heat the oil to 375°F in a deep fryer.
Drop 1 1/2-inch dough balls into the fryer and cook for 2 to 3 minutes, until golden. Remove them with a slotted spoon to paper towels to drain.
Sprinkle the fried Coke balls with powdered sugar while they are still hot, and douse with cola syrup. Garnish with whipped cream and maraschino cherries, if desired, and serve.
Spicy Cheese-Stuffed Fried Olives

Ingredients 2 tablespoons ricotta cheese, room temperature 2 tablespoons cream cheese, room temperature 2 tablespoons Harissa 2 teaspoons honey 50 large pitted green olives, rinsed and dried 1/2 cup panko or plain breadcrumbs 1/4 cup parmesan 1/4 cup flour 1 egg beaten oil, for frying fleur de sel, (optional)
In a bowl, mix together ricotta, cream cheese, harissa, and honey until uniform. Transfer to a pastry bag fitted with the smallest pastry tip you have. You can also use a Ziploc bag to do this, and use scissors to cut off a small piece of the corner of the bag. Pipe filling into all of the olives.
Set up a dredging station. Mix together the breadcrumbs and parmesan in one bowl. Place the flour in another and the beaten egg in between. Roll the olives in the flour and dust off any excess. Dip into the egg and then roll in the parm-breadcrumb mixture until all are coated.
In a Dutch oven or pot, heat 3 to 4 inches of oil to 360° F. Carefully, drop olives into the oil, working in batches depending on the size of your vessel. Fry until a deep golden brown and remove to a paper towel-lined plate. If the olives are not too salty, sprinkle with a little fleur de sel.
Let cool slightly before serving / eating.
Easy Avocado Fries Recipe

Ingredients 2 large ripe avocados 1 cup all-purpose flour 3 large eggs, beaten 2 cups panko breadcrumbs kosher salt for sprinkling oil for deep-frying
Slice avocadoes in half, twist halves apart and remove pit.
Cut each half into three wedges and peel off outer skin.
Dredge each wedge in flour, then soak in egg (leave it in for a few seconds to allow the egg to stick to the flour), roll in breadcrumbs and place on a tray or platter.
Preheat fryer to 350F.
Fry avocado wedges in batches, making sure not to overcrowd the fryer. Remove after 5 minutes, or when they’re golden-brown and crisp-looking.

Buffalo Sweetbreads with Citrus Blue Cheese Recipe

Ingredients For the citrus blue cheese 1/4 cup blue cheese 1/4 cup sour cream 3 tablespoons heavy cream zest of one Orange zest of one lemon For the sweetbreads 1 cup all-purpose flour 1 cup cornstarch 1 tablespoon smoked paprika 1 cup Frank’s hot sauce 1/4 cup butter, chilled 3 scallions, thinly sliced on a bias
For the citrus blue cheese:
In a mixing bowl, combine the blue cheese, heavy cream and sour cream.
Mix until incorporated and season with salt, pepper and the zest of one orange and one lemon.
For the sweetbreads:
Clean the sweetbreads of any visible membrane using your fingers and a sharp knife.
Drop them in lightly boiling water for about a minute, remove and transfer to a bowl of ice water until cool.
Cut sweetbreads into 2-inch pieces.
Mix flour, cornstarch, salt, pepper and paprika together. Dredge the sweetbreads in the flour and shake off excess.
Fry in a 350-degree fryer until golden brown and drain on paper towels.
In a small saucepan, heat the hot sauce until it starts to bubble, then take off heat and whisk in cold butter.
Place sweetbreads in pan and coat with buffalo sauce.
Garnish with thinly sliced scallions, and serve with citrus blue cheese dressing
Sausage and Sauerkraut Fritter Recipe

Ingredients 1 bag fresh sauerkraut, drained 1 large smoked sausage (Bauernwurst or Kielbasa) 4 slices thick-cut smoked bacon 2 tablespoons spicy mustard 1 cup Gruyere 8 eggs 1 cup breadcrumbs For the breading 3 cups flour 1 teaspoon salt 1/2 teaspoon black pepper 3 cups breadcrumbs For the sauce 1 cup mayonnaise 2 tablespoons honey 1/2 cup whole grain mustard
For the fritters:
Cut the bacon and sausage into small pieces.
Heat a medium sized frying pan on medium heat. Add the bacon and sausage and cook for 4-5 minutes or until the bacon is slightly crispy.
Remove from the heat and let cool completely. You can keep the bacon fat that remains in the pan and add it to the mixture to add flavor.
In a large mixing bowl, mix together the drained sauerkraut, mustard, breadcrumbs, 6 eggs and cheese.
When the bacon and sausage is cool, add it to the sauerkraut mixture and mix well. The mixture should be a little firm. Add a little more breadcrumbs to form a nice tight mixture.
Take three bowls, large enough to fit the a few of the fritters into, and keep them separate. Add the flour, salt, and pepper to one bowl, 2 beaten eggs to the second bowl and the breadcrumbs to the third bowl, and keep your bowls in this order.
Take a few of the fritters, place in flour, and roll them around to coat all sides well.
Next, dip the fritters into the egg, coating all sides, then remove to the bowl with the breadcrumbs.
Roll them in the breadcrumbs and place on a plate while you do the others.
Once you get all of them breaded you should place them in the refrigerator for at least in hour. Overnight is even better. You want them to be very cold so that they stay together easily.
Using a large Dutch oven or small stockpot, heat up the oil to 350º F. If you don’t have a thermometer just take a little piece of breadcrumb and drop it into the pan. If it sizzles, then it’s ready.
Add the fritters one at a time leaving enough room for them to float around. If you put too many in at the same time the oil will cool too fast and the fritters will come out greasy and undercooked.
Fry the fritters in the oil for about 5 – 6 minutes. Using a slotted spoon, carefully remove them and place on a plate lined with a paper towel. Continue to fry them until all of them are done.
For the Dipping Sauce: In a small mixing bowl, combine the mayonnaise, honey, and mustard and mix well.
Ingredients 1 gallon peanut oil 1 cup turkey chili’s, preferably Trader Joe’s 1/2 cup water 1 cup buttermilk 1/2 cup pale ale 1 tablespoon white sugar (optional) 1 jalapeno pepper, diced with ribs and seeds removed (optional) 1 cup yellow cornmeal 1 cup all-purpose flour 2 teaspoons sea salt 1 teaspoon baking powder 1/4 teaspoon baking soda 1/2 teaspoon cayenne pepper 1 teaspoon chili powder 8 links Andouille sausage 1 cup cornstarch
For the batter:
In a blender or food processor, purée the chili with the water. Transfer to a medium bowl and add the buttermilk, beer, sugar, if using, and jalapeño, if using. Stir to combine.
In another medium bowl, combine the cornmeal, flour, salt, baking powder, baking soda, cayenne pepper, and chili powder.
Add the chili mixture to the flour mixture, stirring just enough to bring the batter together; there should be lumps. Set aside for 10 minutes.
For the corn dogs:
Before you start coating and frying, set up your work area.
Pierce each sausage with a skewer or chopstick, set aside.
Pour the cornstarch into a pie plate or casserole dish. Roll each skewered sausage in cornstarch, tapping it lightly to remove the excess. Set the coated sausages on a wire rack set over newspaper or paper towels.
Prepare your deep-fryer according to the instructions or fill a high-sided, heavy-bottomed Dutch oven or 12-inch skillet (preferably cast-iron) halfway with oil (about 3 inches) and heat to 375F. (Use a candy thermometer to take the oil temperature.)
Fill two large drinking glasses three-quarters full with the batter.
Working 2 at a time, quickly dip a sausage into each glass and immediately and carefully place them into the hot oil. Fry the corn dogs until the coating is golden brown, about 4 to 5 minutes, turning halfway through.
Using tongs, remove the sausages one at a time from the oil and place them on the wire rack to drain for 3 to 5 minutes. Repeat until all the sausages are fried.
Scotch Egg Recipe

Ingredients 7 large free-range eggs 1 pound ground pork sausage 2 dashes worcestershire sauce 1/2 teaspoon freshly ground black pepper 1 cup breadcrumbs canola or vegetable oil, for frying mayonnaise, to garnish
Hard-boil six of the eggs according to our handy guide, subtracting two minutes from the cooking time. Beat remaining egg and set aside.
Cool eggs completely, peel and pat dry with a paper towel.
Mix worcestershire sauce, pepper and sausage in a large bowl.
Divide sausage into six portions and sculpt loosely around each egg, making sure not to leave any of the white exposed.

Old Bay Fries Recipe

Ingredients For the fries 16 ounces pickled jalapeños 16 ounces dill pickle slices 1 pound potatoes, sliced into french fries 4 cups all-purpose flour 2 tablespoons cayenne pepper 1 tablespoon garlic powder 1 tablespoon onion powder 1 tablespoon black pepper 3 tablespoons Old Bay Seasoning 1 teaspoon salt 2 tablespoons parsley, chopped For the spiked ketchup 1 cup mayonnaise 2 tablespoons Dijon mustard 1 tablespoon roasted garlic 1 1/2 cups ketchup 5 ounces vodka
For the spiked ketchup:
Whisk the mayonnaise, Dijon mustard and roasted garlic together in a small mixing bowl.
Add the ketchup and vodka to the bowl and mix until incorporated. This will keep for up to 6 days in the refrigerator.
To roast the garlic:
Cut 2 heads of garlic in half crosswise and season with salt and pepper and olive oil.
Wrap in foil and place in a 300 degree oven for 1 hour until the garlic is soft.
Remove the garlic from the skin and mix into a paste.
For the fries:
Set fryer to 350 degrees.
Drain dill pickles and pickled jalapenos into colander. Pat dry with paper towels and set aside.
In a medium mixing bowl, mix flour, cayenne pepper, garlic powder, onion powder, ground pepper and 2 tablespoons salt.
Once combined, toss pickles and jalapenos in seasoned flour mixture and coat each piece generously. Pat off excess flour and lay floured pickles flat on large sheet tray.
Fry jalapenos and pickles together in batches, but be sure not to over crowd. Fry until golden brown — about 2 minutes.
Next, fry french fries until golden brown for about 3 minutes.
Place all fried items in medium mixing bowl, season with Old Bay and chopped parsley, toss and serve immediately with spiked ketchup.
Crunchy Coconut Shrimp Recipe

Ingredients 2 pounds extra-large shrimp, cleaned, deveined, tail left intact 1 12-ounce bottle of beer (we used Corona) 1 1/2 cups flour 3 tablespoons melted butter 1/4 cup sugar 1 tablespoon salt 1 tablespoon pepper 2 cups sweetened baking coconut 1 cup desiccated unsweetened coconut 2 cups canola oil, for frying Sambal Lime Mayo 1 cup mayonnaise 3 tablespoons sambal oelek 1 lime, zested and juiced
Combine all sauce ingredients in a bowl, cover and refrigerate until ready to serve.
Mix beer, flour, butter, egg, sugar, salt and pepper in a bowl
Put 1 cup of all purpose flour in another bowl and mix the coconut in a third bowl.
One at a time, holding by the tail, dredge the shrimp into the flour and pat off excess. Dip into the batter and then roll in the coconut pressing down lightly to adhere. Place on a baking sheet and repeat until all the shrimp are covered.
Heat 2 cups of canola oil in a 12-inch frying pan, preferably cast iron, over medium-high heat. Test the oil using the end of a wooden spoon — when it bubbles it’s ready.
One at a time, carefully lay the shrimp into the oil and fry in batches until golden brown turning once, about 2 minutes per side. The shrimp will be tightly curled when fully cooked.
Drain on layers of paper towel, and serve immediately with the sauce.
In a wok or pan, heat the two tablespoons of vegetable oil over medium-high heat. Add the pork, ginger, garlic, pepper flakes, and soy sauce.
Stir fry the pork until it is no longer pink and all the liquid has evaporated, about 5-6 minutes.
Add the carrots and coconut flakes and mix thoroughly. Remove from the heat and cool completely.
To assemble the egg rolls, put a tablespoon of the filling at the bottom corner of the wrapper. Lift the bottom and roll halfway. Fold the sides into the middle and continue to roll until you reach the tip. Use the egg wash to seal the ends. Make sure to cover the wrappers you are not using with a damp kitchen towel so they don’t dry out.
Heat oil to 350 degrees and fry egg rolls until golden brown, about 2-3 minutes.
Drain on paper towels. Serve the egg rolls immediately with the sweet and sour sauce.
Ingredients 2 pounds thick sliced smoked bacon 1 white onion, finely diced 1/4 cup honey 2 tablespoons ancho chile powder 1 teaspoon chipotle chile powder salt vegetable oil, for deep-frying 8 corn tortillas thinly sliced radishes and shaved lettuce for garnish Roasted tomato remoulade (optional)
In large skillet, cook the bacon over medium heat until crisp; remove to paper towels to drain. Reserve the fat in the pan.
Cut the bacon crosswise into 1-inch strips and put in a bowl.
In the same skillet, saute the onions until golden brown. Using a slotted spoon, transfer the onions to the bowl with the bacon, add the honey and ancho and chipotle powders, and season to taste with salt.
Fill a deep fat fryer with oil or add enough oil to a deep skillet to measure about 1 inch deep and heat to 375 degrees F on an instant-read thermometer.
Roll about 2 tablespoons of the filling mixture in each corn tortilla, secure with 2 toothpicks, and deep fry until golden brown and crispy.
Remove, drain on paper towel, discard the toothpicks, and serve immediately with radishes and shaved lettuce.

In a large pot, heat olive oil. Sauté onions with saffron until soft.
Add rice and coat with oil. Deglaze with white wine.
Stir in hot chicken stock one ladle at a time, letting the stock absorb before adding any more (check out our
basic risotto technique for more on this). Once you have incorporated all the stock, finish with the two cheeses.
Season with salt and pepper.
Cool the risotto. Make one-ounce balls, then roll the balls in the flour, then egg, then breadcrumbs.
Heat canola oil to 300 F. Fry arancini for 3 minutes. Remove and pat dry with paper towels. Serve immediately.
